Chef Roland Olah brings his international experience to Martel. Originally from Budapest, Hungary, one of the world’s great “food cities”,  Roland has hungered to bring his unique perspective on haute cuisine to the U.S. 

“We are delighted to have someone of  his caliber at our restaurant.  Roland brings to us a level of culinary expertise that is usually only found in the top restaurants of the world’s great cities." says Martel owner, Marty levine.

Roland has been the Executive Chef at Martel since 2011. Prior to Martel he worked as Executive Chef at the renowned Café Erté in Budapest and Daniel Boulud New York.  His career and training before that spans almost two decades, including attendance at some of the world’s most exacting gastronomy courses, and ongoing seminars and workshops. 

Chef Roland has found a home right here in Fairfield, where he is fast making a name for himself.  He genuinely cares about every dish that leaves his kitchen, and it shows.
