Chef Roland Olah brings his international experience to Martel. Originally from Budapest, Hungary, one of the world’s great “food cities”, Roland has hungered to bring his unique perspective on haute cuisine to the U.S.

Roland has been the Executive Chef at Martel since 2011. Prior to Martel he worked as Executive Chef at the renowned Café Erté in Budapest and Daniel Boulud New York. His career and training before that spans almost two decades, including attendance at some of the world’s most exacting gastronomy courses, and ongoing seminars and workshops.
Chef Roland has found a home right here in Fairfield, where he is fast making a name for himself. He genuinely cares about every dish that leaves his kitchen, and it shows.
